Gazpacho

(This is my version of a popular Spanish dish, making maximum use of garden vegetables)

Ingredients:
- 6 tomatoes for making liquid
- 4 tomatoes
- 1 yellow pepper
- 1 green pepper
- 1 red sweet onion
- 1/2 cucumber
- 3 cloves garlic
- 1/2 fresh chili pepper
- 1/4 cup finest virgin olive oil
- 1/4 cup balsamic vinegar
- salt, pepper

Preparation:
- core the 6 tomatoes, cut up and puree together with garlic and chilli pepper. Cut up finely the 4 tomatoes, pepper, cucumber, onion and add to the pureed tomatoes together with olive oil and vinegar. Season to taste.

In this version, I added olive oil to the tomatoes as I pureed them, and decorated with basil leaves fried crisp by dropping them for a few seconds into hot olive oil.
