Oatmeal tartlets with minted hummus

Ingredients:
(For two people, who have had an appetizer before. All ingredients are organic.)
- 3/4 cups oatmeal
- 1/4 tsp baking soda
- 1/4 tsp sea salt
- 1 tbsp butter
- 1 egg yolk
- juice of 1/2 lemon
- 1/2 cup dired chickpeas
- 3/4 cup ricotta cheese
- 6 tbsp sesame seeds
- 3 tbsp chopped fresh mint, 6 mint leaves
- pumpkin seeds and paprika to garnish

Preparation:
- Soak the chickpeas overnight, then cook in pressure cooker for 10 minutes, let sit to cool
- In food processor, mix oatmeal, butter, salt, and baking soda; pulse 18 times on fastest speed; add egg yolk, pulse again; if needed, add some milk; press into 4 in tartlet pans; bake for 25-30 min; allow to cool
- Purée sesame seeds; add chickpeas, lemon juice, ricotta and purée until smooth; stir in chopped mint; put into tartlet forms, dust with paprika, garnish with pumpkin seeds; decorate with mint leaves
