End of summer salad with fried haloumy

(It was raining today, the first real rain since the spring. I went to get the last of the summer crop, tomatoes, rocket, sorrel, radishes, and pepper; adding some fried haloumy, we had a great appetizer.)


 

Ingredients:
(for two people)
- 6 small tomatoes
- 1 orange pepper
- 5 large leaves of sorrel
- 8 leaves of large rocket
- 1/2 red onion, sliced
- 3 cloves of garlic
- 1/4 Jalapeño
- 5 tbsp finest virgin olive oil
- 1 1/2 tbsp finest balsamic vinegar
- salt and pepper - 4 haloumy slices

Preparation:
- Cut up first 5 ingredients; use garlic press to mash garlic and Jalapeño; add oil and vinegar; season to taste; mix. Fry haloumy until light brown; top individual portions with fried haloumy.
