Preparation:
- mix yeast with some milk and sugar, let become frothy. Make dough from flour, salt, milk, yeast mixture. Let rise 1 hour. Roll out to fill a pan.
- make filling by sauteeing onion in 2 tbsp of olive oil. Quarter pears and slice finely. Add to sautéed onions. Place on dough then springle crumbled blue cheese on top. Bake at 450 F (225 °C) from 20-25 minutes.
- heat pecans in a pan; add honey and cook until liquid evaporated; add tamari; spread on waxed paper and let cool; cut into small pieces
- add cut up arugula on top; springle candied pecans.
