Choose one of the following topics to explore for Project 2. The format for this report is similar to Project 1: prepare a (roughly) 10 page paper discussing the chemistry behind your topic including variations, uses, health concerns and any other aspect you feel is significant to the use and safety of your product.

• Artificial sweeteners
• Food preservatives for meat, fruit, vegetables and grains
• Artificial colourants: include the FD&C list and the chromophores involved
• Herbicides: include GMO resistant crops as well
• Insecticides: include chlorinated insecticides and ACE inhibitors
• GMO Crops: modifications to include herbicide and insecticide resistance
