Wine as a lens on human civilization and terroir

This course explores the history, science and culture of wine to provide students a rich understanding of one of the world’s most celebrated natural products.

Using terroir as a central framework, students explore the wine world in both theory and practice. The concept of terroir is used to highlight how "place" roots the identity of both a people and their wine.
